In South India, Upma is prepared at least once a week. It is prepared using semolina. I have used Bombay Rawa.
Measurement : 1 cup =150ml

Ingredients:
● semolina (bombay rawa) 2 cup
● onions 2
● green chilly 3
● oil 2tbsp
● ghee 1tbsp
● mustard seeds ¼ tsp
● cumin ¼ tsp
● asafoetida a pinch
● bengal gram 2 tsp
● urad dal 2 tsp
● cashewnut 6 (broken into pieces)
● coriander leaves
● curry leaves
● salt to taste
● sugar a pinch
● water 6 cups
Method:
Take a kadai and put a teaspoon of ghee in it. Add the cashew pieces and semolina and roast slowly on a low flame until light brown in colour. When done, keep aside on a plate.
Put the oil and the remaining ghee in the kadai. Add the mustard seeds, as they crackle, put in the cumin seeds, Bengal gram, urad dal and asafetida. As they turn slightly brown, throw in the green chillies and onion. Do put a few curry leaves if you have. It gives a good fragrance. Once, they are cooked. Put water and salt to it.
Let boil. Once it boils, simmer and slowly add the roasted semolina. Take care as lumps can be very easily formed. Let cook for some time.
Add finely cut coriander leaves, sugar and lemon juice. Mix well. Serve hot with dry chutney powder if you wish.
Take a tip:
You can add veggies such as beans, carrot, peas, capsicum and tomato. The veggies need to be cooked separately. Alternately, you can cook them by putting in the seasoning.
You can avoid onions if you wish. Add a few pieces of ginger and it enhances the taste.
