Introduction
After about a year of using my HOTLOGIC® like a substitute microwave just for the reheating cooked food, I decided to figure out how to use it to cook from raw ingredients. It took a bit of time to get used to cooking via conduction at temperatures below 200°F. During this learning process I created HLCOOKING.COM in order to share what I discovered about using a HOTLOGIC®. At that time there were no cookbooks specifically written for the HOTLOGIC®. There were a few videos with HOTLOGIC® recipes, but mostly people recommended experimenting with slow cooker recipes to see if they worked. As for desserts, I could only find one recipe mentioned that had worked for someone. I decided to see if I could make desserts in the HOTLOGIC® and share them in a cookbook.
Coming up with a variety of desserts was a challenge. The Quick Start Guide provided with the HOTLOGIC® stated that it was not possible to bake cookies and cakes. Without these as an option, it was going to be necessary to do a lot of experimenting to create a good selection of desserts.
When creating recipes for a HOTLOGIC®, I looked at slow cooker dessert recipes for inspiration. My first breakthrough came when I adapted a cheesecake recipe and found out how well it did in the HOTLOGIC®. This led to me creating several flavors of cheesecakes.
Then I had to try cakes and cookies, even though the inventor of the HOTLOGIC® said it was not possible. I learned that due to the length of time the ingredients take to cook, the chemistry that produces lift
was gone by the time the ingredients set. This meant the HOTLOGIC® can only produce dense desserts from raw ingredients. Light and fluffy cakes were definitely not possible.
Another reason why baking was not possible was because most recipes used wheat flour, which required higher temperatures to combine with other ingredients. But wheat flour was not the only flour available. Through trial and error, I discovered flours that did cook in the HOTLOGIC® and was able to bake a dense cookie! It was then that I knew I was on my way to creating a varied collection of dessert recipes for the HOTLOGIC®.
