Elizabeth George

Elizabeth George, MD, FAAFP, is a board-certified family physician, a fellow of the American Academy of Family Physicians, and the cofounder and director of Healthy Eating Adventure, a community-based program that empowers people to reclaim their health through whole food, plant-based nutrition. A graduate of Brown University School of Medicine, she has spent over 40 years treating the whole patient, focusing on preventive care, wellness education, and lifestyle-driven disease reversal.

Dr. George and her husband, Dr. Robert George, established their medical practice in Mercersburg, Pennsylvania, in 1980, emphasizing illness prevention through healthy lifestyles. She spearheaded efforts to eliminate smoking from Chambersburg Hospital, cofounded a maternity clinic to promote prenatal nutrition (earning a March of Dimes award), and has been a driving force behind multiple community wellness initiatives.

Her passion for public health led her to serve as medical director on international mission trips to Bolivia, Ecuador, and the Amazon, where she encouraged communities to embrace traditional plant-based meals rather than processed foods. She is also a founder of the Mercersburg Area Council for Wellness, which promotes walkability, bikeability, and access to healthy food.

In 2010, she launched Healthy Eating Adventure to bring evidence-based nutrition and hands-on support to individuals, families, and communities. The program has since expanded beyond its Mercersburg roots, reaching Harrisburg’s senior community, the U.S. Army War College in Carlisle, and Yuma, Arizona, with plans for continued growth. Each Adventure provides structured guidance, group support, and expert coaching to help participants successfully transition to a whole food, plant-based lifestyle.

The results of this program have been presented at physician continuing education conferences, including AAFP CME conferences, Overlook Family Practice Residency, and the international Healthy Lifestyle Expo. Dr. George also worked with hospital dining services to implement plant-based entrées at every meal and continues to advocate for better nutrition education in medical schools and healthcare settings. She received the inaugural Pennsylvania Academy of Family Physicians Community Service Award for her leadership in community wellness.

Dr. George is a seasoned media contributor, previously hosting the weekly radio show Ask Dr. Liz and writing the column Habits for a Healthy Life. Her work has been featured on healthyeatingadventure.org, in the PlantStrong documentary series, and through collaborations with the Esselstyn Foundation, Plantstrong.com, and PCRM.

Beyond medicine, she enjoys gardening, hiking in national parks, painting, playing the flute in a professional orchestra, and cooking with her grandkids. She and her husband met in high school and built their medical practice together. Now based in Florida and Washington, she continues her work with Healthy Eating Adventure, inspiring individuals and communities to embrace a healthier future—one meal at a time.
